 日本餐廳總廚 Head Chef - Japanese Cuisine 

 福利: 12日大假 (滿一年,多一日大假,最高達15日),12日勞工假,每月派發目標營業獎金及小費,膳食津貼,生日假,生日禮遇,

工作地點: 中 環 

工作時間: 週一至週六10:30-22:30 需落場,例休星期日 

 工作重點  

1. 協助準備開業前的廚房計劃,產品研發,制定食譜及標準營運流程 

2. 管理廚房所有運作 

3. 五年或以上日式廚房中工經驗

 職位描述及 工作職責 

1. 為新的日本料理餐廳準備開業前的餐飲廚房計劃,營運預算,並協助制定具挑戰性及可執行的目標和計劃 

2. 管理所有廚房運作,重點保持一切衛生標準,員工培訓並監督一系列食品製備和展示準則  

3. 遵守有關健康,安全或其他合規性要求的本地法規,以及品牌標準的本地法規  

4. 有效地控制食品成本及並能保持食物良好質數  

5. 因應市場需要設定餐牌 

6. 有熱誠懂得與客人保持良好關係及溝通 

7. 懂得管理食材倉存、減低損耗及訂貨安排 

 職位要求  

1. 烹飪技能培訓或相關學科的文憑或職業證書  

2. 五年或以上的廚師經驗,至少三年的相關職位經驗  

3. 解決問題、推理、激勵、組織和培訓技能  

4. 良好溝通技巧,管理及領導才能懂得分配廚房員工工作,有團隊合作精神和主動勤奮  

5. 懂基本電腦操作,粵語和基本英語,懂日語及持有 餐廳總廚- 高級日式串燒

 Main duty 

1. New store opening (NSO) project, productdevelopment, recipes formulating and standard operating procedures (SOP)  

2. Manage the whole kitchen operations 

3. Five years or more of Japanese-style kitchenwork experience

 Job description and responsibilities 

1. To manage NSO kitchen plans and budgetingfor the new Japanese restaurant and to assist in formulating strategic goals 

2. Manage the whole kitchen operations, tomaintain the highest hygiene standards, to provide staff training and ensurethe food are in the highest standard 

3. Comply with law regulations related tohealth, safety or other compliance requirements for brand standards 

4. Manage food costs and reduce losses withoutaffecting the overall quality of product 

5. Set up menus in response to market needs 

6. Have enthusiasm and know how to maintaingood relationship and communication with guests 

7. Know how to manage food inventory and orders 

 Job requirements 

1. Culinary skills training or diploma /vocational certificate in related disciplines 

2. Five years or more of chef experience (Atleast 3 years of relevant position experience) 

3. Good in Problem solving, self-motivated,well organized and have the ability of counselling 

4. Good communication and leadership skills,manage staff delegation and to create the highest teamwork moral  

5. Basic computer literate; Good command ofCantonese and basic English, Japanese is preferred
