烹調菜式、預備食材、採購食材,監控食材庫存、編訂餐單和設計菜式、監控食物品質及環境衞生、安排人手調配及培訓員工、管理廚房之運作、在上什及二厨督導下協助其他厨務、督導四厨或以下厨師
